Whipped Feta with Dill, Grapes, Chickpeas and Smoked Mackerel by laleshii
Whipping feta creates a luxurious foundation for the sharp sweet flavour of grapes and the tender caress of chopped dill. The combination is fantastic, providing polyphenols for gut health along with the chickpeas, and oily fish for protein and anti-inflammatory fats.
Ingredients

100 g Feta 264 cal

160 g Celery, finely diced 22 cal

100 g Red grapes, halved 69 cal

25 g Dill, finely chopped 11 cal

100 g Cucumber, diced 15 cal

1 can Chickpeas, drained and rinsed 656 cal

1 tbsp Olive oil 120 cal

1 tsp Red wine vinegar 0 cal

200 g Smoked mackerel 610 cal

Crumble the feta into a mixing bowl with a whisk, add about 25ml water a little at a time and whip into a smooth mixture. You may need more or less water depending on how firm and moist the feta is.

To a separate mixing bowl, add the celery, red grapes, dill, cucumber and chickpeas with the oil and vinegar and season with salt and pepper. Mix with your hands.

Add the whipped feta to the base of a large platter and smooth across the dish with the back of a spoon.

Scatter the celery and grape mix over the whipped feta and flake over the mackerel pieces.
