Steps

    Crumble the feta into a mixing bowl with a whisk, add about 25ml water a little at a time and whip into a smooth mixture. You may need more or less water depending on how firm and moist the feta is.

    To a separate mixing bowl, add the celery, red grapes, dill, cucumber and chickpeas with the oil and vinegar and season with salt and pepper. Mix with your hands.

    Add the whipped feta to the base of a large platter and smooth across the dish with the back of a spoon.

    Scatter the celery and grape mix over the whipped feta and flake over the mackerel pieces.
